Salivating over the triple threat cookies, Amber! (But of course the potatoes would come first…). I lived in Spain for a year, and would love to know what Southern dish most closely approximates an exquisite paella, in your opinion. It wouldn’t be jambalaya, would it? Thanks so much for the sweet words! I think jambalaya would be the closest to a paella ( for Cajun culture at least)!
